Handmade 440C Stainless Steel Kitchen Knife Set
This handmade kitchen knife set takes its cues from Spanish cutting tradition, where knives are built narrow, pointed, and made for working close to bone. The set covers five shapes, including a broad chopping blade, a curved boning knife, and two straight-bladed knives for general work.
Every blade is 440C stainless steel, a grade chosen in custom sets for its balance of hardness and corrosion resistance. Dark hardwood handles with visible pins run across the whole set. It suits home chefs, butchers, outdoor cooks, and anyone who breaks down whole cuts rather than buying them portioned.

Handmade Craftsmanship
440C asks more of a smith than plain carbon steel. Its chromium content narrows the temperature window in which the steel hardens properly, so heat treatment has to be controlled tightly across every blade in the set. A set is only as good as its weakest piece.
The blades in this set are not variations of one shape. A boning knife needs a narrow, curving profile that follows a joint. A chopping blade needs weight and a broad edge. Grinding each of those correctly means changing approach from knife to knife rather than repeating the same bevel five times.
The handles are shaped from dark hardwood and pinned through the tang. Matching five handles so the set looks and feels consistent takes longer than making a single knife, since every scale has to be sanded to the same profile.
Blade Performance
440C sits at roughly 1 percent carbon and 17 percent chromium. The carbon lets it harden and hold an edge, and the chromium is what keeps it from rusting when it meets blood, brine, or acidic vegetables.
That corrosion resistance is why 440C turns up so often in custom kitchen and butchery sets. Meat work is wet work, and a blade that spots every time it touches a carcass becomes a chore.
The variety of shapes in the set is the practical part. A narrow, flexible blade follows the contour of a bone where a straight chef knife cannot. A broad blade with weight behind it handles chopping through joints and dense vegetables. A pointed straight blade does the trimming and general prep in between.
Stainless of this grade takes a little more effort to sharpen than plain carbon steel, and it repays that with an edge that survives a wet working session without corroding.
Handle & Grip
The handles are dark hardwood, pinned rather than glued, with the pin heads visible on the surface. Visible pins are a construction detail rather than decoration; they show that the scales are mechanically fixed to the tang.
Hardwood grips well when hands are wet or greasy, which matters more in butchery than in vegetable prep. It also stays warm to the touch, so a long session in a cold kitchen does not stiffen your fingers the way a metal handle would.
All five handles share the same profile. When each knife in a set feels the same, you can swap tools mid-task without adjusting your grip, and that is where a matched set earns its keep.
Wipe the wood dry after washing and oil it a few times a year with a food-safe oil.
Ideal Uses
- Boning and separating joints on poultry, lamb, and pork
- Trimming fat and silverskin from larger cuts
- Chopping dense vegetables and working through smaller bones
- General kitchen preparation across the whole set
- Outdoor cooking and processing game at camp
- Gift giving for cooks who break down whole cuts
Sheath & Carry
No sheath or roll is listed with this set. Store the knives on a magnetic strip, in a block, or in a knife roll bought separately, so the edges never rest against each other or against other utensils.
A loose drawer is the worst option for any knife set. Blades knocking together roll the edges, and reaching into a drawer of loose knives is where most kitchen injuries happen.

Knife Care
440C resists rust well but is not rustproof. Wash each blade by hand in warm soapy water and dry it fully rather than leaving it in a rack to drain.
Keep the set out of the dishwasher. Detergent dulls the finish, and the drying cycle cracks wooden handles over time. Store the knives where the edges cannot touch. Sharpen on a whetstone when a blade starts dragging instead of slicing; 440C takes slightly more work than carbon steel and holds the result longer. Rub food-safe oil into the handles a few times a year.
Why Choose Centuries Crafts?
Each blade in this set is forged, ground, and finished by hand, and the handles are shaped to match across all five pieces. Materials are chosen before the work starts, and each knife is checked before the set ships. Matching a set to one standard is harder than making a single knife, which is the whole reason to buy one.
