Knife Care
Wash each knife by hand with warm water and mild soap, then dry it right away. Never put carbon steel in a dishwasher, since the heat and detergent will strip the finish and rust the edge.
Wipe a thin film of food-safe mineral oil onto the bare edge after drying. Store the knives in the roll only once they are fully dry.
Sharpen on a whetstone when the edge stops biting cleanly, and keep the blades off glass or stone cutting boards, which dull an edge quickly. Wood or plastic boards are much kinder to the steel.
