5-Piece Handmade Damascus Chef Knife Set with Full-Tang Blades & Leather Roll
This handmade Damascus chef knife set is built around full tang construction, which is uncommon in kitchen sets at this level. The steel runs through the entire handle as one continuous piece on every knife, so the joint between blade and grip has no weak point.
Blades are hand-forged from 1095 and 15N20 carbon steel folded into hundreds of layers in a twist pattern, hardened to 56 to 58 HRC. Kao wood scales sit against brass bolsters, secured with brass and mosaic pins. The set rolls up in leather. It suits home chefs, keen cooks, and gift buyers who want a set that will last.

Handmade Craftsmanship
The Damascus here comes from two specific steels. 1095 is a high-carbon steel at roughly 0.95 percent carbon, which brings hardness and edge holding. 15N20 carries nickel, which resists the acid etch and stays bright, creating the contrast that makes the pattern visible.
Our smiths forge-weld those two into a billet, then fold and redraw it to build up hundreds of layers. Twisting the hot billet before the final draw is what turns straight layers into the spiraling figure you see on the finished blades.
Full tang construction means each blade is cut from a single piece of steel that extends through the handle. Brass bolsters sit at the front of each scale, adding weight at the balance point and protecting the wood where it meets the blade.
The Kao wood scales are blind fitted, pinned with two brass pins and a mosaic pin, then sanded flush. Matching five handles by hand is slower than making one, and it is what makes a set feel like a set.
Blade Performance
At 56 to 58 HRC, these blades sit where quality kitchen knives generally land. Harder steel holds an edge longer but chips against bone and hard boards; softer steel survives abuse but dulls quickly. This range keeps a fine edge through real cooking and forgives an occasional mistake.
The 1095 and 15N20 pairing takes a keen edge and returns to sharp on a whetstone in minutes. That responsiveness matters in a kitchen, where you sharpen far more often than you would any outdoor knife.
Cutting edges in the set run 7, 6, 5, and 4 inches, covering chef work, slicing, general utility, and detail cutting. The cleaver profile takes on bone and dense squash that would put a thin blade at risk.
Full tang matters most on the larger knives. A 7-inch blade generates real leverage against the handle joint during a hard chop, and continuous steel through the handle carries that load rather than concentrating it.
Handle & Grip
Kao wood is dense and hard-wearing, and it takes a fine finish. The blind fitting means the scales wrap the tang cleanly rather than leaving the steel exposed along the top and bottom edges.
Brass bolsters do two jobs. They add weight just behind the blade, shifting the balance forward where a chef knife wants it, and they seal the front of the handle where moisture would otherwise work into the joint.
The 5-inch handles, measured including the bolster, give a full grip with room to shift. Because all five match, you can swap knives mid-task without changing how you hold them.
Wood handles need a wipe dry after washing and a light food-safe oil a few times a year.
Ideal Uses
- Everyday chopping, slicing, and mincing across the whole set
- Breaking down poultry and portioning larger cuts
- Clever work on bone, joints, and dense vegetables
- Detail trimming and peeling with the smaller blades
- Outdoor and camp cooking, since the roll travels
- Gift giving for home chefs, and display for collectors
Sheath & Carry
The set comes with a leather roll, with a separate slot for each knife so the blades never touch. That separation is the main thing protecting a fine edge in storage.
A roll also travels in a way a block cannot. It goes to a rental kitchen, a campsite, or a friend's house without loose blades in a bag. Store it somewhere dry, with the knives clean and lightly oiled before they go in, since leather holds humidity against carbon steel.

Knife Care
Wipe the blades during prep rather than waiting until the end, since acidic foods such as citrus, tomato, and onion mark carbon steel within minutes.
Hand wash in warm soapy water and dry immediately. Never use a dishwasher, which will rust the blades and dry the Kao wood in one cycle. Apply a thin coat of food-safe mineral oil before the knives go back in the roll, and make sure they are fully dry first. Use wood or plastic cutting boards only. Sharpen on a whetstone when a blade starts pushing food instead of parting it, and oil the handles a few times a year.
Why Choose Centuries Crafts?
Every blade in this set is forged, ground, and finished by hand, and every handle is fitted the same way. Full tang construction is a build decision that costs more steel and more time, and it is the reason a set like this survives years of daily use rather than a season.
