The twist pattern comes from rotating the hot billet before it is drawn out. That rotation pulls the layers into a spiral, and grinding the blade to shape cuts across those spirals to expose the flowing figure you see on the finished steel.
Rosewood scales are fitted, pinned, and sanded through progressive grits after the blades are heat treated. Matching five handles by hand takes longer than making one, since the set should look consistent when the roll is opened.
Blade Performance
Hardness of 56 to 58 HRC is a sensible range for kitchen knives. Harder steel holds an edge longer but chips more readily against a bone or a hard board. Softer steel survives abuse but dulls fast. Knife Care
Hand wash each knife in warm water with mild soap and dry it immediately. Dishwashers will rust carbon steel and dry out wooden handles in one cycle.
Apply a thin coat of food-safe mineral oil to the blade before storage. Keep the knives on a wood or plastic board rather than glass or stone, since hard surfaces roll an edge quickly. Sharpen on a whetstone when cutting starts to require pressure. Oil the rosewood a few times a year to keep the grain from drying.
