15-Inch Handmade 440C Chef Knife with Rosewood Handle & Leather Sheath
This handmade 440C chef knife is a large kitchen blade, 15 inches overall with a 10-inch cutting edge. That size puts it beyond a standard chef knife and into slicing and butchery territory, where a long edge does the work in one clean pull.
The blade is 440C stainless steel, hardened to 56 to 58 HRC and ground to 3 mm at the spine. It is full tang, with rosewood scales running the length of the handle, and it ships with a cowhide leather sheath. It suits home chefs handling large cuts, outdoor cooks, and anyone who wants a stainless kitchen blade with less maintenance than carbon steel.

Handmade Craftsmanship
440C is a high-chromium stainless steel, and it is harder to work than plain carbon steel. It demands accurate heat treatment, since the chromium content narrows the window where the steel hardens properly. Getting it to 56 to 58 HRC consistently is the part that separates a good blade from a soft one.
The blade is hand-forged and finished with a pattern in the steel, then hand-sharpened rather than machine-ground to an edge. Hand sharpening takes longer but avoids the heat buildup that a powered belt can cause at the very edge.
Full tang means the steel runs the entire length of the handle as one continuous piece, with the rosewood scales pinned to either side. On a knife this long, that construction matters. A partial tang creates a stress point where the blade meets the handle, and a 10-inch blade generates real leverage against that point.
Blade Performance
440C is a stainless steel with roughly 1 percent carbon and 17 percent chromium. That chromium content is what makes it resist rust, which is the practical advantage in a kitchen where the blade meets water and acidic food constantly.
At 56 to 58 HRC, it holds a working edge well through normal cutting. Stainless of this type takes slightly more effort to sharpen than plain carbon steel, but it also does not demand oiling and drying after every use.
The 3 mm spine gives the blade enough rigidity to push through dense material without flexing. A 10-inch blade with a thin spine would wander in a cut; this one tracks straight.
Ten inches of edge is the real feature. Slicing a brisket, carving a roast, or portioning a large fish all go cleaner in one long stroke than in several short ones, because every time you stop and restart you leave a mark in the meat.
Handle & Grip
Rosewood is dense, hard-wearing, and naturally oily. Those oils give it a measure of water resistance and a smooth grip that stays comfortable through repeated use.
The 5-inch handle fills an adult hand with room to shift. On a blade this long, having a full grip matters, because you are steering a lot of steel and a cramped handle turns into fatigue quickly.
Balance sits forward of your hand, which is what you want in a slicing knife. The weight carries the blade through a long pull so you are guiding rather than forcing.
Rosewood asks for occasional care. Wipe it dry rather than leaving it wet, and rub in food-safe oil a few times a year.
Ideal Uses
- Slicing roasts, brisket, and large cuts in single strokes
- Carving at the table or on a serving board
- Butchery and portioning at home or at camp
- Breaking down large vegetables and melons
- Outdoor cooking where one long blade covers several jobs
- Gift giving for home chefs who cook for a crowd
Sheath & Carry
The knife comes with a handmade sheath in high-quality cowhide. That is unusual for a kitchen knife, and it makes the blade genuinely portable, so you can take it to a barbecue, a camp kitchen, or a butchering session without wrapping it in a towel.
For daily kitchen storage, a magnetic strip or block is still better than the sheath, since leather holds humidity. Use the sheath for transport and storage away from the kitchen, and keep the blade clean and dry before it goes in.

Knife Care
440C resists rust far better than carbon steel, but stainless is not rustproof. Wash the blade by hand in warm soapy water and dry it rather than leaving it wet in a rack.
Keep the knife out of the dishwasher. The heat and detergent will dull the finish and dry the rosewood scales even though the steel itself resists corrosion. Store it on a magnetic strip or block for daily use, and in the leather sheath only for transport. Sharpen on a whetstone when the edge slows; 440C takes a little more work than carbon steel but holds the result. Oil the rosewood a few times a year.
Why Choose Centuries Crafts?
We forge, grind, and hand sharpen each blade in our workshop, and the handles are fitted and finished by hand. Materials are chosen before the work begins, and every knife is checked before it ships. A 10-inch blade puts real leverage on the handle joint, which is why the full tang construction is not optional here.
