13-Inch Hand-Forged Damascus Chef Knife with Olive Wood Handle
This hand-forged Damascus chef knife runs 13 inches overall with an 8-inch blade, which puts it at the longer end of the chef knife range. That length pays off when you are working through volume, since a longer stroke moves more food per pass.
The blade is high-carbon Damascus steel. The handle is premium olive wood, fitted with a decorative mosaic pin between two steel pins. It suits home chefs who cook for a crowd, outdoor cooks, and collectors who want a kitchen knife with real handle detail.

Handmade Craftsmanship
Damascus starts as a stack of two steels with different carbon and nickel content. Our smiths forge-weld that stack solid, then draw and fold it to build layers. Once the blade is ground and etched, one steel darkens, and the other stays bright, which is what makes the pattern visible.
Grinding an 8-inch blade evenly takes more care than a short one. The bevel has to stay consistent across the whole length, and any wobble shows plainly on a long flat.
The handle carries three pins, and the choice is deliberate. Two steel pins do the structural work of holding the scales to the tang. The mosaic pin in the center is decorative, built from small rods of different metals bundled and set in a matrix, then cut across so the pattern shows as a small medallion in the wood.
Olive wood is dense and naturally oily, which means it holds a fine finish without heavy lacquer.
Blade Performance
High-carbon Damascus takes a fine edge and gives it back easily on a whetstone. That responsiveness matters in a kitchen, where you sharpen far more often than you would a hunting knife.
An 8-inch blade gives you a long cutting stroke. Slicing a roast, breaking down a large squash, or working through a full board of vegetables all go faster because you are not repositioning between cuts. The trade is that a longer blade needs a bigger board and more counter space to use comfortably.
The belly of the blade carries enough curve to rock through herbs and garlic, while the flatter section near the heel handles push cuts against the board.
Damascus of this type is carbon steel rather than stainless. It sharpens beautifully, and it needs drying and oiling in return.
Handle & Grip
Olive wood carries natural oils that give it a measure of water resistance and a warm, smooth feel. In a kitchen, where hands move between wet and dry constantly, that resistance is genuinely useful.
The 5-inch handle balances an 8-inch blade well. Balance sits just forward of your grip, so the knife carries some of its own weight through a chopping motion rather than sitting dead in your palm.
The mosaic pin is a small visual detail, but it also gives your thumb a landmark. Over time, you stop looking at the handle to know how you are holding the knife.
Wood needs a little attention. Wipe it dry rather than leaving the knife in a sink, and rub in food-safe oil a few times a year.
Ideal Uses
- Chopping and slicing in volume, where a long blade saves passes
- Breaking down poultry and portioning larger cuts of meat
- Preparing dense vegetables such as squash and root crops
- Slicing roasts and carving at the table
- Outdoor and camp cooking
- Gift giving for home chefs, and display for collectors
Sheath & Carry
This knife is sold for kitchen use rather than belt carry. Store it on a magnetic strip, in a block, or in a knife roll so the edge never rests against another utensil.
A loose drawer is the one thing to avoid. Blades knocking against metal roll an edge faster than any amount of cutting, and reaching into a drawer of loose knives is how most kitchen cuts happen.

Knife Care
Wipe the blade during prep rather than at the end, since acidic food such as citrus, onion, and tomato will mark carbon steel within minutes of contact.
Hand wash in warm soapy water, dry the blade completely, and apply a thin coat of food-safe mineral oil before storage. Keep the knife out of the dishwasher entirely. Use wood or plastic cutting boards, never glass or stone, which roll an edge in a handful of cuts. Sharpen on a whetstone when the blade starts pushing food rather than parting it, and oil the olive wood every few months.
Why Choose Centuries Crafts?
We forge, grind, and finish each blade by hand, and we fit each handle the same way. Materials are selected before the work starts, and nothing leaves without a check on fit and finish. A long chef knife has to feel balanced through a hundred cuts, not just the first one.
