12-Inch Damascus Hunting Meat Knife with Olive Wood Handle
This Damascus hunting meat knife is built around a 6.5 -inch blade on a 5.5 -inch handle. That near-even split is deliberate. Meat work is long, repetitive, and precise, and a knife that balances in your hand tires you far less than one that pulls forward.
The blade is forged from 15N20 and 1080 high-carbon steels in a Fire Storm pattern, a twisted figure that swirls across the steel rather than flowing in one direction. Olive wood scales with fiber spacers form the handle, and a buffalo skin sheath is included. It suits hunters who process their own game, outdoor cooks, and campers.

Handmade Craftsmanship
Fire Storm is made differently from a flowing pattern. After forge-welding 15N20 and 1080 into a billet, our smiths twist the hot steel before drawing it out. That rotation pulls the layers into a spiral, and grinding the blade cuts across those spirals to expose the swirling figure.
Because the twist is done by hand at forging heat, the density of the pattern varies from one billet to the next. Some run tight and busy, others open and broad.
The fiber spacers in the handle are thin layers set between the olive wood and the tang. They are partly visual, giving the handle a defined line rather than an abrupt transition, and partly practical, filling any small irregularity where wood meets steel.
Olive wood is dense and naturally oily, which makes it cut differently from most hardwoods and lets it take a fine finish without heavy lacquer.
Blade Performance
1080 carries roughly 0.80 percent carbon. It hardens predictably and stays tough, denting rather than chipping when the edge finds bone or cartilage. In meat processing, where the edge meets joints and rib bones repeatedly, that toughness prevents the small chips that ruin a working edge.
15N20 adds nickel and a finer grain, bringing the edge to a keener point. That refinement matters here as much as toughness does. Meat work rewards a sharp edge above all else, because a dull blade tears muscle fiber instead of parting it and leaves a ragged cut.
The pairing sharpens back on a stone in minutes, so you can restore the edge partway through an animal rather than finishing the job with a blade that is fighting you.
At 6.5 inches, the blade gives a long, smooth slicing stroke. Fewer passes mean fewer stop-and-start marks in the meat, which is why butchers favour length for this work.
Handle and Grip
Olive wood carries natural oils that give it a measure of water resistance and a warm feel. Meat processing is wet work, and a handle that does not soak up blood and fat is easier to keep clean.
At 5.5 inches, the handle nearly matches the blade, which puts the balance point close to your hand. The knife turns where you steer it rather than leading forward, and that control is what a long processing session demands.
The 5 mm scale thickness spreads pressure across your palm rather than concentrating it along the edges. Over an hour of repetitive cutting, that difference is the one between a comfortable session and a blister.
Wood needs a little care. Wipe it dry after use and rub in food-safe oil a few times a year.
Ideal Uses
- Meat processing and butchery at home or at camp
- Field dressing and quartering game
- Slicing and portioning larger cuts
- Campsite cooking and outdoor food preparation
- Bushcraft tasks that do not require chopping
- Gifting to hunters and outdoor cooks
Sheath and Carry
A buffalo skin leather sheath is included. Buffalo hide is thicker and denser than standard cowhide, so it protects the edge and holds its shape through seasons of carry.
The sheath covers the blade fully and rides on your belt for one-handed access in the field. Store the knife outside the leather between uses. Tanned hide holds humidity, and blood residue plus damp leather will mark carbon steel quickly.

Knife Care
Blood and stomach contents are acidic and will spot carbon steel overnight. Wipe the blade during the work, then wash and dry it completely once you are finished.
Apply a thin coat of food-safe mineral oil or blade oil before storage and keep the knife dry and out of its sheath. Rub oil into the olive wood every few months to stop the grain from drying. Sharpen on a whetstone when the edge stops gliding through meat, and avoid powered grinders, which build heat that softens the temper permanently. A gray patina forms over time and slows further rust.
Why Choose Centuries Crafts?
We forge, grind, and finish each blade by hand and fit every handle individually. Materials are chosen before the work begins, and each knife is checked for fit and finish before it ships. A meat knife is judged on how it feels at the hundredth cut, not the first, so that is the standard we build toward.
