12.5-Inch Handmade Damascus Chef Knife with Book-matched Olive Wood Handle
This handmade Damascus chef knife carries a 7-inch blade on a 5.5 -inch handle. Seven inches is the classic chef knife working length, long enough to slice a roast in one pull and short enough to control on a home cutting board.
The blade is forged from 15N20 and 1080 high-carbon steels in a BoneFire pattern. Book-matched olive wood scales with a black fiber lining give the handle mirrored grain on both sides. A buffalo skin sheath is included, which makes this one of the few chef knives you can carry to a campsite safely. It suits home chefs, outdoor cooks, and collectors.

Handmade Craftsmanship
The billet begins as alternating sheets of 15N20 and 1080. Our smiths forge-weld the layers at welding heat, then work the hot steel until the BoneFire figure appears. An acid etch darkens the 1080 and leaves the nickel-bearing 15N20 bright, producing the contrast you see across the blade.
Grinding a 7-inch kitchen blade demands more accuracy than a field knife of the same length. A chef knife is expected to sit flat against a board along the whole edge, and any high spot in the grind shows up the first time someone tries to slice a tomato skin.
Book matching the handle means splitting one piece of olive wood and opening it like a book so the grain on one side mirrors the other. It is a technique from furniture and instrument making, and it only works if the cut is clean and both halves align on the tang.
Blade Performance
1080 carries roughly 0.80 percent carbon. It hardens predictably and takes a fine edge, which is what a kitchen knife needs above all else.
15N20 contributes nickel and a tighter grain structure, bringing the edge to a genuinely keen point. Together they cut cleanly and come back sharp on a whetstone in minutes.
That responsiveness matters more in a kitchen than anywhere else, because you sharpen a chef's knife far more often than any field blade. A steel that fights you on the stone becomes a knife you stop maintaining.
The 7-inch blade has enough belly to rock through herbs and garlic, a flatter section near the heel for push cutting against the board, and enough reach to portion a chicken breast in one pass.
Both steels are carbon steels rather than stainless. That means a finer edge than most stainless kitchen knives, and it means the blade will react to acidic food if left wet.
Handle and Grip
Olive wood is dense and naturally oily. Those oils give it real water resistance, which matters in a kitchen where your hands and the handle move between wet and dry constantly.
At 5.5 inches, the handle is shorter than the blade, which puts the balance forward toward the heel. Chefs generally prefer that. A blade-forward knife does more of the work on its own during repetitive chopping, so your wrist does less over a long prep session
The Book-matched grain runs continuously across both scales, and the black fiber liner sits as a thin dark line where wood meets steel.
Wood asks for a little care. Wipe it dry rather than leaving the knife in a sink, and rub in a food-safe oil every few months.
Ideal Uses
- Everyday kitchen preparation across vegetables, herbs, and aromatics
- Slicing and portioning boneless meat, poultry, and fish
- Carving roasts at the table
- Campsite and outdoor cooking, since the sheath makes it portable
- Gifting to home cooks and keen amateurs
- Display, given the pattern and the handle grain
Sheath and Carry
A buffalo skin leather sheath is included, which is unusual for a kitchen knife and genuinely useful. It lets you take the knife to a barbecue, a rented kitchen, or a campsite without wrapping the edge in a towel.
For daily storage at home, a magnetic strip or block is still better than the sheath, since leather holds humidity against carbon steel. Use the sheath for transport and make sure the blade is clean and dry before it goes in.

Knife Care
Wipe the blade during preparation rather than at the end. Acidic ingredients such as citrus, tomato, and onion mark carbon steel within minutes of contact.
Hand wash in warm soapy water, dry the blade completely, and apply a thin coat of food-safe mineral oil before storage. Never put the knife in a dishwasher, which will rust the blade and dry the olive wood in a single cycle. Use wood or plastic cutting boards rather than glass or stone, which can roll an edge in a handful of cuts. Sharpen on a whetstone when the blade starts pushing food instead of parting it.
Why Choose Centuries Crafts?
We forge, grind, and finish each blade by hand, and every handle is fitted individually. Materials are chosen before the work starts, and nothing ships without a check on fit and finish. A chef knife gets picked up more often than any other blade in a house, so it has to earn that.
